Have you got lots of easter chocolate left? This simple fridge cake is a great recipe to upgrade your leftover chocolate and create a bake-free delicious treat for everyone.
Makes 10-12 Chunks Prep 15 minutes Cook 15 minutes
For this recipe, you will need:
300g of Chocolate – Use any easter Chocolate you have
100g of Butter
140g of Golden Syrup – Honey or Maple Syrup will work as a substitute
1tsp of Vanilla Extract
200g of Digestive Biscuits – Roughly chopped
200g of your chosen snacks; this could be a mixture of your favourite snacks like marshmallows, pretzels, dried fruit, wine gums, sweets or any treat you fancy. We recommend using a mixture of dried fruit and rice krispies.
Fridge Cake Instructions:
To melt the chocolate:
Melt the chocolate, butter and golden syrup in a bowl over a pan of simmering water, occasionally stirring, until smooth and glossy. Top Tip: use room temperature butter and cut the chocolate into small, even pieces as it will melt quicker.
Once the chocolate, butter and golden syrup is combined, add the vanilla, chopped biscuits and your chosen snacks, then stir until combined.
When combined, pour your chocolate mixture into a lined baking tin and press firmly with a spoon to flatten and squash the mixture, then leave it to cool in the fridge.
After the mixture has cooled and is set, you can cut it up and enjoy. If you want to add even more chocolate, you can decorate by drizzling white chocolate on top.
