Kale White Bean Soup Recipe

KALE AND WHITE BEAN SOUP RECIPIE

Cooking this recipe is so easy and fast, and the taste will appeal to even the pickiest eaters! A Soup for all seasons! 😍🍵

We will need:

-2 cans of white beans – washed with water
-1 large carrot🥕- finely chopped
-1 celery stalk – finely chopped
-2 medium-sized potatoes – cut into cubes
-2 medium-sized tomatoes🍅- chopped
-1 / 2 large red onion🧅 – finely chopped
-2 cloves garlic🧄- chopped
-65 g of spinach🌱
-3 1/2 -4 cups vegetable broth🍵
-2 tbsp parsley – chopped
-1 / 2 tsp dried basil
-1 / 2 tsp dried oregano
-1 / 2 tsp dried thyme
-Olive oil🫒
-Sea salt, black pepper🧂
-Grate cheese to taste

Preparation process:
1️⃣In a large pot on medium temp heat the oil. Add the onion and fry it for about 4 minutes. Add the garlic and fry for about 30 seconds.

2️⃣Add the tomatoes, carrots and celery. Cover the pot and simmer for about 4 minutes.

3️⃣Pour on the broth and add the potatoes, basil, oregano, thyme. Bring the soup to a boil. Decrease temp to low and cook for about 8 minutes. or until the vegetables are softened.

4️⃣Add the beans and remove from the heat. Keep the lid covered for about a few minutes.

5️⃣Transfer 1 / 4 soup to a bowl and blend with a food mixer until smooth. Pour back into the pot.

6️⃣Submit the spinach, season with salt and pepper, add a dash of olive oil and cover for a few more minutes.

7️⃣Serve sprinkled with grated hard cheese, eaten with toast.
