‘Saltibarsciai’ Soup

A wonderfully simple summer soup that is the perfect companion on a hot summer’s day.

500ml jar of grated Red Beetroots
2 Cucumbers (cubed into 2cm pieces)
2 Hard Boiled Eggs
1 Cup Sour Cream
1L Kefir
2 Spring Onions (diced finely)
Fresh Dill
Seasoning to taste



  1. Take a large bowl and mix together the beetroot and cucumber.
  2. Add the sour cream and kefir and mix well.
  3. Add the seasoning, spring onions and dill.
  4. Serve and enjoy!
