A wonderfully simple summer soup that is the perfect companion on a hot summer’s day.
500ml jar of grated Red Beetroots
2 Cucumbers (cubed into 2cm pieces)
2 Hard Boiled Eggs
1 Cup Sour Cream
2 Spring Onions (diced finely)
Seasoning to taste
- Take a large bowl and mix together the beetroot and cucumber.
- Add the sour cream and kefir and mix well.
- Add the seasoning, spring onions and dill.
- Serve and enjoy!
