Delight in the perfection of a refreshing summer strawberry and flax seed pudding with our quick and easy recipe. In just under 20 minutes, you’ll have a bowl of mouthwatering goodness ready to be savoured and enjoyed.

Serves 2. Prep 10 minutes. Make 8 minutes
For this recipe, you will need:
- 200g Natural Yoghurt
- 2tbsp Ground Flaxseed
- 200g finely chopped strawberries
- 1tbsp syrup (or other sweetener)
For the Granola
- 6tbsp oatmeal
- 2tbsp oat flour
- 20g of soft butter
- 1tbsp any syrup
Strawberry and flax pudding Instructions:
Step One
Heat the finely chopped strawberries in a pot until they soften and fall apart (about 4-5 mins). Add the syrup and leave to cool.
Step Two
Mix oatmeal, flour and softened butter in a bowl until combined.
Step Three
Next, fry handfuls of the oat mixture in a pan on low heat for about 3-4 minutes or until oats are golden brown and toasted. This makes the oats like homemade granola.
Step Four
Mix the flax seeds with the yoghurt and a spoonful of the heated strawberries.
Step Five
Finally, to serve, layer the yoghurt, granola mixture, and strawberries and then top with the rest of the granola to create a delicious summer strawberry and flax pudding.
Top Tips & Tricks
Don’t have any oat flour? No worries, you can make your own; simply blend porridge oats into a fine powder and voila- you have oat flour. You can also substitute this for any flour you have, as such a small amount is needed.
