Light & Fluffy Pancakes

For this recipe, you will need:
- 150g Loose Cottage Cheese
- 1 Medium Sized Egg
- 1/2 Medium-sized Banana
- 20g of White Spelt Flour
- 1/2 tsp Baking Powder
- Butter or Oil for Cooking
Light & Fluffy Pancake Instructions:
Put the loose cottage cheese, banana and egg into a mixing bowl and combine until smooth. You can use a food processor, hand mixer or mashed to ensure the ingredients are fully combined.
Carefully add the flour and baking powder, mixing until fully combined and no lumps remain.
Once all the ingredients are combined, you are now ready to cook your pancake. Prepare the pan, put oil/butter in a pan, and gently heat on medium/low. Once the pan is ready, place a heap of batter into the pan (about 1 tbsp) and fry for about 3-4 minutes on each side until golden brown.
After you have used up all your batter, this recipe roughly makes 7 light & fluffy pancakes you can now serve and enjoy.
Top Tips & Tricks
Before frying, add your favourite fruit to the batter; try adding some blueberries.
Serve with your favourite topping; for a light dessert, add golden syrup or honey, and for a heavier rich dessert, pair your pancakes with whipped cream and fruit or swap the cream for ice cream.
Have a sweet tooth? Add some melted chocolate over your pancakes, or before frying, add chocolate chips into the batter.
