The perfect pork party salad

Celebrate this coronation weekend with a tasty, crunchy pork salad, perfect for picnics and street parties.

Made with ingredients you most likely have in the fridge, this crunchy pork salad is great for serving guests at a party or to be enjoyed as a delicious meal.

Serves 1 Prep 10 Minutes

For this recipe, you will need:

To make the salad:

  • 80g Cherry Tomatoes
  • 1 Cucumber
  • 20g Iceberg Lettuce
  • 40g Black Olives
  • 50g Greek Salad Cheese (feta)
  • Canned Chickpeas
  • 40g Pork Bacon
  • 1 tbsp Diced Red Onion

To make the sauce:

  • 1/2 tbsp Olive Oil
  • 1 tsp Apple Cider Vinegar
  • 1/2 tsp Mustard
  • 1/2 tsp Honey

Crunchy Pork Salad Instructions:

To make the salad

Cut up all the vegetables, first finely chop a handful of lettuce, next dice your cucumber into bite-sized pieces, then cut the black olives in half, the cherry tomatoes into quarters, and the red onion into fine pieces.

Once you have cut up all the vegetables, place them into a large mixing bowl.

Next, cube your Greek salad cheese and combine it with your chopped veggies.

Once you have prepared the cheese and veggies, cut your pork bacon into small pieces and fry in a dry pan until golden.

To make the sauce

In a small bowl, mix the olive oil, apple cider vinegar, mustard and honey, and mix until fully combined and smooth.

Serving up

Once you have prepared the veggies, cheese, pork and sauce, combine them.

In a large mixing bowl, combine your salad mixture with the sauce, pork bacon and canned chickpeas.

Finally, plate up your salad and enjoy!

Top Tips

Increase the quantity of ingredients to make it suitable for large parties and gatherings.

You can mix and max the veggies you use; for example, if you don’t like olives, why not use red pepper instead or instead of pork bacon, why not try chicken?
