Baking made easy! With just 6 ingredients, this simple but delicious oatmeal cookie recipe is the perfect treat for an afternoon snack.
Makes 12. Prep 15 minutes Bake 15-22 Minutes
For this recipe, you will need:
- 1 Medium Sized Ripe Banana
- 1/2 Large Sweet Apple
- 90g Smooth Nut Butter (e.g. peanut, almond, cashew)
- 2 tbsp Buckwheat Flour
- 100g Oatmeal (porridge oats)
- 1/2 tsp cinnamon ( for decoration)
- A handful of chosen fruit/chocolate (for decoration)
Baked Oatmeal Cookies Instructions:
Step One: Mash your medium-ripe banana in a bowl using a fork.
Step Two: Grate the large sweet apple into fine pieces, add cinnamon, and mix.
Step Three: Combine the mashed banana, grated apple, nut butter and flour. Mix until a thick paste is formed.
Step Four: Add the oatmeal to the thick paste to form a dough. Once mixed, let the dough stand for 10 minutes.
Step Five: While the dough rests, prepare the baking tray and line it with baking paper.
Step Six: Wet your hands lightly, scoop the dough with a spoon (about a tablespoon), shape the cookie with your hands and place onto the tray.
Step Seven: Once the cookies have been formed, top them off with pieces of your favourite fruit or chocolate.
Step Eight: Bake the cookies for 15-22 minutes at 190 C or until lightly browned.
Top Tips
While the cookies are resting, pre-heat the oven. This means they will be ready to bake straight away.
Chill the dough for 1-2 hours before baking for a better flavour.
If you don’t have any baking paper, grease the baking tray with a small layer of butter and sprinkle flour on top until a thin layer is formed, this stops the oatmeal cookies from sticking to the tray.
