Immune-Boosting Chicken Noodle Soup

Delicious immune-boosting chicken noodle soup is the perfect meal for any cold winter day or as a pick-me-up when you are feeling ill.

Serves 6-8 Prep 5 mins Cook time 2-4

What you will need:

  • 2 Stock Cubes
  • 5 Carrots
  • 4 Stalks of Celery
  • 1 Whole Chicken
  • Fine egg noodles
  • A pinch of salt & pepper
  • 1 White onion
  • Fresh parsley
  • 3 Bay leaves

Chicken Noodle Soup Method

  1. Rinse the chicken and place it in a medium-sized pot.
  2. Add in the stock cubes, bay leaves, carrots, celery, onion, parsley and a pinch of salt and pepper. Fill with water enough to cover the chicken.
  3. Bring the water to a boil, then leave to simmer until the chicken is fully cooked (around 1 1/2 – 2 hours).
  4. Remove the chicken from the pot and gently pull it apart.
  5. Cook the fine egg noodles in a separate pot; once cooked, strain out the water and set aside.
  6. Now serve; place the desired amount of noodles into a bowl. Cut up a few of the carrots and celery, then place in the bowl along with the chicken and stock.
  7. And enjoy!

The leftover stock can be kept in the fridge for up to 3 days; you can also freeze the stock for a quick meal at a later date.
