Immune-Boosting Chicken Noodle Soup
Delicious immune-boosting chicken noodle soup is the perfect meal for any cold winter day or as a pick-me-up when you are feeling ill.
Serves 6-8 Prep 5 mins Cook time 2-4
What you will need:
- 2 Stock Cubes
- 5 Carrots
- 4 Stalks of Celery
- 1 Whole Chicken
- Fine egg noodles
- A pinch of salt & pepper
- 1 White onion
- Fresh parsley
- 3 Bay leaves
Chicken Noodle Soup Method
- Rinse the chicken and place it in a medium-sized pot.
- Add in the stock cubes, bay leaves, carrots, celery, onion, parsley and a pinch of salt and pepper. Fill with water enough to cover the chicken.
- Bring the water to a boil, then leave to simmer until the chicken is fully cooked (around 1 1/2 – 2 hours).
- Remove the chicken from the pot and gently pull it apart.
- Cook the fine egg noodles in a separate pot; once cooked, strain out the water and set aside.
- Now serve; place the desired amount of noodles into a bowl. Cut up a few of the carrots and celery, then place in the bowl along with the chicken and stock.
- And enjoy!
The leftover stock can be kept in the fridge for up to 3 days; you can also freeze the stock for a quick meal at a later date.
