Valentine’s Day Sweet Treats

Valentine’s day is a day to celebrate love and to cherish your loved ones. To make your loved one feel special and celebrate them; there is no better way than treating them to some handmade sweet treats.

Here are four simple and easy recipes for you to make and show your love this Valentine’s Day.

Valentine’s Vanilla Cupcake recipe

Makes 12 Prep 20 mins Cook 15mins

Ingredients:

  • 2 Large Eggs
  • 110g Self-raising flour
  • 110g Caster sugar
  • 110g unsalted butter
  • 1 tsp Vanilla extract
For the icing
  • 150g Unsalted butter
  • 300g Icing sugar
  • 3 tbsp Milk
  • 1 tsp Vanilla extract

Method:

  1. Cream together the caster sugar and butter until fully combined. Make sure the butter is softened before mixing.
  2. Next, add the large eggs and vanilla extract, mixing until smooth.
  3. Slowly add in the plain flour until a batter is formed.
  4. For something extra, why not add in some chocolate chips?
  5. Bake in the oven for 15 minutes at 180°c or until golden brown.
For the icing
  1. Add icing sugar 100g at a time with softened butter and slowly mix until fully combined.
  2. Add the vanilla extract and milk to soften the icing.

Once the cupcakes are cooled, decorate with icing and sprinkles, we suggest using a piping bag for better control.

Valentine’s Rocky Road Squares

Serves 16 Prep 20 mins Chill 2 hrs

Method:

  1. Grease a square baking tin with baking paper.
  2. Put the butter, golden syrup and chocolate into a heatproof bowl and melt over a saucepan of water, gently heating until the mixture is melted and glossy.
  3. In a separate bowl, gently break up the digestive until roughly chopped.
  4. Mix the biscuits, 50g of cranberries, 75g Malteasers/desired chocolate and 75g of marshmallows into the bowl of melted chocolate. Stir until the ingredients are fully covered.
  5. Pour mixture into the greased tin and scatter the remaining cranberries, Malteasers and mini marshmallows.
  6. Sprinkle over a pinch of sea salt and pour heart sprinkles.
  7. Chill the mixture for a minimum of 2 hours and until set.
  8. Remove from the fridge and cut into 16 equal parts.

Ingredients:

  • 100g Unsalted Butter
  • 75g Golden syrup
  • 300g Chopped chocolate
  • 150g Digestive biscuits
  • 75g Dried cranberries
  • 150g Malteasers/ desired choc
  • 100g Mini marshmallows
  • Heart sprinkles

Valentine’s Lemon Crepes

Makes 12 Prep 20 mins Cook 3 mins

Ingredients:

  • 300ml Milk
  • 100g Plain Flour
  • 2 Large eggs
  • 1 tbsp sunflower or vegetable oil

Method:

  1. In a mixing bowl, combine the plain flour with the milk, slowly adding it to reduce lumps.
  2. Whisk in the eggs and oil until fully combined.
  3. Pour batter into a pan on medium heat, enough to cover the base; heat on both sides for at least 1 minute and until golden brown.
  4. Serve with lemon and sugar and with your toppings of choice.
  5. And enjoy!

Valentine’s Chocolate Covered Strawberries

Serves 5 Prep 15 mins Chill 2 hrs

Method:

  1. Prepare the strawberries and rinse them in cold water to clean any dirt or residue.
  2. In a heatproof bowl, add the chocolate for melting, then place it over a pan of water and gently heat until melted.
  3. Dip in your strawberries, enough to cover the berry.
  4. Place strawberries onto a tray and refrigerate until set.
  5. Prepare the chocolate for decorating, melt the white chocolate, and add it to a piping bag once cooled.
  6. Cut the end off of the piping bag, then drizzle over the set of strawberries. Leave to set
  7. And Enjoy!

Ingredients:

  • One punnet of strawberries (400g)
  • 100g Chocolate of choice
  • 30g White chocolate for decorating
